I think you could do a static default route to the null 0 interface, then In
Eigrp config, redistribute static.

(Config) ip route 0.0.0.0 0.0.0.0 null 0
(config) router eigrp 100
(config-router)redistribute static

I recently did this in a RIP environment for one of the IEWB core labs and it
worked. I am not at home with my equipment so I cant lab it up to verify.
