I think, the command 'switchport host' is just a macro to configure the port
with portfast and access mode. If you go back to the running configuration,
you cannot see this command; instead you will see the status of switchport
mode and portfast.

Thanks Rick popping this command, and it led me to go have a look at this
command

The original question, though, was asking about disabling the negotiation of
etherchannel without using the command: 'channel-group # mode on'

On most newer switches you can do a "switchport host" to disable various
protocol negotiations such as STP, Etherchannel and trunking and it
enables portfast.
