I would leave the default on SW2 and SW3 and set dst-mac on SW1
Assuming you scenario is there is a Ether-channel between

SW1 --> SW2 and SW1 --> SW3

if you have Ether-channel

SW1 and SW2 and then SW2 to SW3

so I would put on SW1 dst-mac and on SW2 src-dest-mac and SW3 remain with
default.

it all depends on the ratio of the source to destination, once you
understand it, it is actually relatively simple.

think on the path of your traffic, know that 1 source to 1 destination will
cross a single link
by default 2 source to 1 destination will load balance..... i think you
should get the point by now :-)
