Basically there are a few things you can do but I find it best not to even
let spam get to the exchange server. You dont want your server processing
all that junk and if it has viruses in it you dont even want to let it touch
the server. I have used many different anti spam software and appliances
and the best by far I have found to be the baracuda anti spam firewalls.
Bascially you point your mx record to the cuda and then the cuda delivers
cleaned mail to the exchange.
