Let me bet against you :)
You can always use another number for the subinterface. Re-using the same
number is the problem.
Rack1R2#sh run | sec multi
interface Serial0/1/0.1 multipoint
ip address 1.1.1.1 255.255.255.0
frame-relay interface-dlci 555

Rack1R2#conf t
Enter configuration commands, one per line. End with CNTL/Z.
Rack1R2(config)#no interface Serial0/1/0.1 multipoint
Not all config may be removed and may reappear after reactivating the
sub-interface

Rack1R2(config)#interface Serial0/1/0.1 poin
Rack1R2(config)#interface Serial0/1/0.1 point-to-point
% Warning: cannot change link type

Rack1R2(config)#default interface s0/1/0
Building configuration...
Rack1R2(config)#int s0/1/0
Rack1R2(config-if)#en frame
Rack1R2(config-if)#interface Serial0/1/0.1 point-to-point
% Warning: cannot change link type
Rack1R2(config-subif)#interface Serial0/1/0.2 point-to-point
Rack1R2(config-subif)#

I bet the "default int s0/1" command will work for you. Seems like I have
used it before. I can't imagine having to reboot a router to change the
link type. That would be ridiculous in a real-world environment.
