as a recent candidate back from tokyo..
maybe i can share some experienced..
they are using japanese keyboard, but the proctor is there to give a short
brief on the locations for those key which have a different locations.. eg..

yes.. u may have feel un easy initially, but can always ask the proctor
where the key is..
in my experience, the proctor is in the lab all the time.. (i do heard that
some proctor will not in the room and expect u to call them for help.)..
as For Secure CRT...
u have 2 choices (all shortcut are preconfigured)...
u can open a window for each device..
or alternately... u can console into the Terminal Server and use the CTRL-^X
to switch between devices in one window..
as for food..
personally i didn't manage to finish the lunch.. (maybe due to pressure,
dunno)...
