I think for the types of questions you asked you might be inclined to check out InternetworkExpert's End-to-End CCIE Program.

They start you out with a fundamental understanding of each topic, which lays the groundwork for on which a thorough, structured program can be built.

I've also found that CBT Nuggets offers a nice intro to break you into topics quite well, just to get your feet wet.

IPExpert's WorkBook has a nice breakdown for the first 20 labs or so by topic.

NLI offers some nice subject materials on a per subject basis and can be purchased per topic making them immediately affordable.

NMC's DoIT Labs are great if when using the "Horizontal Approach" and even better since you have the ShowIT and it may help you the most if you only have a few routers as you mentioned.

Both NMC and IE have a tech library. NMC's Tech Library has a strategy, IE's has a lot of mini-labs. IPExpert offers a about 80 or so subject specific labs.

NLI/CCBootcamp's newest workbook are priced 5 labs per $99.00 or so and can be used to throw you into the fire. They provide some of the best step-by-step walkthroughs available.

There are a couple of cheaper labs on ebay for sale for under $100 each as I recall and they are good for helping one learn the core.

CCO has a wealth of "mini-labs" per topic.

Cisco Press offers a few books on the subject of the CCIE Lab, - Duggan and Gorito as well as Solie. However, you may well benefit from the practical studies series.
