There is no single book even close to level of complexity and contents in the voice lab. There are a few things I can recommend you:
1. CCO Voice and IP Communications:

look at those sections with CallManager, IPCC and Unity;
2. SRND:
look at the one for CallManager 3.3 and QoS for AVVID. However, the SRND QoS for AVVID seems disappeared in that page and replaced with Enterprise QoS.
I'd highly recommend you go through these two SRNDs before attempting the lab. a lot of time savers.
3. CCME 3.0 or 3.1 administration guide.
you should know where to find the right commands.
4. if you have a copy of Networker CCIE Voice tutorial, that's very helpful too.
