Not sure about all DHCP clients but I would say that they
are unable to detect the failure of one gateway over another
unless they 1) Use irdp 2) ping the default gateway every x seconds
and wait for response timeout. I think someone a few months
ago tested the dual gateways wiith some OS's and IRDP
was the only way to get the failure detection to work.

I woul rather use VRRP/HSRP to define a virtual IP address
and then give this out to the clients. Also with newer features
like GLBP you can do load balancing between multiple
routers acting as default gateways providing you with more
bandwidth useage possabilites.
