I typically use (for smaller companies)

Cacti at centeral site to get a snapshot of all sites
and their utalization.

If a site is high on bandwidth utalization and I need
more info I deploy a small linux box running ntop
(http://www.ntop.org/ntop.html) and that tells me the
utalization by user and by application in a graphical
format. I will also install IPTraff which is a great
CLI utility for seeing top talkers in a text based
format. Real handy if you are SSH'ing into the remote
linux box and wanting to do sniffer traces or advanced
troublehsooting. (Just remember to deny SSH to the
local linux box as you will always look like the top
talker. (or possibly come in on a second interface..
really depends on your topology.

Other than that you may want to consider for your
centeral site a local TFTP Server, Syslog Server
(Syslog-NG), Radius for centeralized authentication,
NTP Server and running Expect or some other
interactive programming language so that you can run
ad-hoc scripts on all your routers to change banners,
passwords... ect automatically.
