U could save money by mixing 2500 and 2600s . U could use 2500 as backbone and 2600 as ur routers.
U will also need a 252 series for ur Frame realy switch.
2600 would allow u later on to practice MPLS if u wish. It is just a matter of how much ur wiling to spend.
Some of the commercial labs requires devices with have at least 2 ethernet ports so my advice to u is to get hold of a lab book or a free sample, when u find what u wnat or like by th eequipment to fit it.
