Well, You can, but You have two different default gateways
configured for the subnet - which, if coupled with for example
not-that-quite proficient help desk people may effect in more errors,
confusion, or situations were during "problem solving" one virtual IP
will be choosen more often that the other, and this will break
load-balancing of traffic between gateways.

When You do separate subnet for each HSRP group, there's always one
default gateway (be it .1 for /24 subnets) - so, no confusion. Also,
planning of load balancing is somewhat easier - You usually do know how
many PCs will be there for a given subnet.

And that are just notes from real life. Technically, You can of course
do two HSRP groups in one subnet and provide two (or more) gateways from
it.
