A number of obvious solutions exist using Cisco:
- Turn on ip accounting on the LAN interface facing the host. This will
give you breakdown of packets between hosts, but not by protocol. This can
be polled and collected via SNMP.
- Turn on Netflow on the router. This will give you the breakdown by
protocol, src/dest port, src/dest host and much more. A good starting
point is

Failing that using:
- SPAN/Mirror ports on a switch, that feeds any number of opensource tools
can give you this. Good starter tools would be NTOP, IPTraf, FlowScan/MRTG
(For NetFlow visualisation) + many others
