Any data transmission can be intercepted. Whether it
is part of a PDF file, a phone call, or a fax.
Scanning to PDF isn't any less secure than the other
two methods. As far as I know, scanning to PDF does
not do OCR, and the word would not be in plain text in
the transmission.
