1) I wouldn't expect them to let you use interse ARP. If they want you to
turn it off they will tell you. I would practice doing all labs with it
disabled.
2) I always set the ports to either ACCESS or TRUNK if that is going to be
their only function.
3) It depends on the requirements/restrictions, but if they do not give you
any restrictions they I would redistribute the routes in to the backbone
router so it has a return path to all of the routers in your network. Again
though it depends on any requirements/restrictions that you are given.
