In a lab environment for ease of mapping (layer3 to layer2) I would use
P2P but if I had to run OSPF and/or IS-IS across the Frame-relay network
I would probably just use multipoint subinterfaces everywhere. OSPF and
IS-IS are easier to deal with when the interface types match.
