You can actually use either. The Loopback is used to ensure that if you have multiple paths, the BGP connection stays up no matter what. The real key here is that you have to have IGP routes that get you from A to C or BGP won't know next hops as B will blackhole the traffic. So if you use the loopback on C as the update source, make sure A knows how to reach the loopback on C via the IGP.
