help required with qos settings on cisco ip phones

I am getting very confused here,

what I am trying to do, it improve the qos settings on the voip network

specifically IP phones - I am getting very confused on TRUNKING

Which is better?

1.
interface FastEthernet0/20
 switchport trunk encapsulation dot1q
 switchport trunk native vlan 11
 switchport mode trunk
 switchport voice vlan 100
 no ip address
 mls qos trust cos
end

OR

2.
interface FastEthernet0/21
 switchport access vlan 11
 switchport voice vlan 100
 no ip address
 mls qos trust cos
end

also, how do you sucsesfully map cos to QOS?
