You can go to the Software download section of CCO. Follow the links as if
you want to download 12.1 IOS. Eventually you will get to a place where you
can read release notes and new features.
There may be an easier way someone know, but that is what I did and there
are docs that cover changes, new features and caveates.

Does anybody have a link to a Cisco doc that breaks down the added
features and/or caveats between 12.0 and 12.1? I know about things like
the wildcard mask in EIGRP, which functions like OPSF but anything else
major?
