What IOS versions should I practice with. I think the switches have 4.x.
Have there been any changes with different versions? I don't know Cat IOS?

There shouldn't be any problem with this. In a number of situations two
switches are connected via two trunk ports for physical redundancy (STP
being used to block one of the ports).
