Hi,
'MPLS and VPN Architectures' (Cisco Press) is very good (although there's
barely a mention of QoS (upcoming QoS book again from Cisco Press promises
that)).
Also, you may like to take a look at 'MPLS Technology and Applications'
(Morgan Kaufman) is also v.good (not so Cisco centric though).
Finally, take a look at the MPLS documentation on both the Cisco and Juniper
web sites (plus the MPLS Working Group section of the IETF web site).
