I believe that Dialer Profiles are the "modern" way to set-up the interface.
Basically it give you more flexibility in your configuration.
With the Profile, you can have multiple destinations. Let's say that you
have a central router and if you lose connection with any of your spoke
routers, you can use one interface to call up any one of the spokes... With
the legacy configuration, you would have to have an interface for everyone
that you want to talk to.
