One method I like is to use one side of an 8X11 paper for each router in the c
onfig. Read through the notebook then list all required interfaces for each ro
uter and write the IP adddress/mask leaving room for other protocol addresses.
 Also include other interface related info like routing protocol, vlan, etc.

Then you can go through each router and configure all the interfaces pretty qui
ck.

Your network map and these sheets are your bible for the next 2 days.
